No Soak Slowcooker Pinto Beans
2 lbs dry pinto beans, picked through and rinsed1 large chopped onion
garlic powder to taste
1 (32 oz) container of broth- I used vegetable because I had some that was expiring soon
2-4 C water
1 (7oz) can diced green chilies
Place beans in crockpot and cover with liquid (broth first and the water if needed) to cover by about 2-3 inches. Add onion and garlic powder, stir to mix. Cook on high for 6-8 hours. When the beans are soft (mine were done in about 6 hours) add in can of green chilies and turn to low. Cook for about another hour or until they look like the picture below.
I served mine over cornbread that I had leftover from the other day. This is one of the meals I make when I don't have a lot of money at the end of the month. Tomorrow we are going to have some of the leftover beans for lunch. I'm going to make them into bean and cheese burritos.
